Easiest recipe in the world

Because our climate is not very suitable for growing tomatoes I grow mine in a small greenhouse.

Normally this time of the year there is an abundance of tomatoes… not this year though. We had a summer over here in The Netherlands with hardly any sun or warmth.

In hopes you had a better summer, hence lots of tomatoes, either homegrown or cheap from the stores, here is a recipe with as main ingredient tomatoes …

This recipe feeds about 2 persons

Depending on the size chop up about 15 tomatoes. Place the chopped up tomatoes in a fairly large bowl. Cut either goat or sheep cheese in tiny cubes.
Add cubes to the tomatoes and stir. Add 2 crushed cloves of garlic, a bit salt and lots of pepper. Stir in a good amount of olive oil so all ingredients are coated with oil. Place the bowl on a tiny flame (on a hot plate) just to slightly warm the tomatoes

Time to cook the pasta, take whatever kind you like. Chop up at least 3 bunches of basil. By the way …  they say that if you tear basil instead of chopping it, the taste is better…

When the spaghetti is done add the contents of the bowl and the basil and stirr.
Heat all ingredients well, until the cheese just starts to melt a bit. Maybe more olive oil or salt? That’s up to you.

    Mmm…delicious! Only wish I had some tomatoes because like you, no sun, no heat, no tomatoes. In fact, my plants have looked quite pathetic all summer. Strangely, my basil did really well.

    this is the kind of dish that I love! so wonderful. we have a really warm week here in portland coming up. too bad you can’t send your tomato plants to my place for a nice visit…a little vacation for the tomatos. Oh but I admit it, your plant may be bare when I send the plant back to you. I would try to resist but finally I would eat them all.
